A Lunch Made in a Pinch
When lunch needs to be quick, filling, and require very little thought, this is one of my favorites.
A chewy pretzel bun, savory chicken, melted cheese, and sweet and tangy honey Dijon make it feel a little more special than your average quick lunch—but it takes about 10 minutes to put together.
Even better? Most of the ingredients can be picked up at Trader Joe’s.

Ingredients
1 pretzel bun
Chicken breast bites with honey Dijon sauce
Shredded 3-cheese blend
Optional: Green grapes on the side for a sweet and salty pairing.
How to Make It
1. Build the sandwich.
Slice the pretzel bun in half. Add shredded cheese to the bottom half, followed by about four pieces of chicken.
2. Air fry.
Place the open sandwich in the Ninja Crispi Air Fryer and use RECRISP for 3 minutes, or until the chicken is warm, the cheese is melted, and the bun is lightly toasted.
3. Finish.
Spread the honey Dijon sauce on the top bun, close the sandwich, and enjoy.
That’s it.
Why It Works
You get a little bit of everything: a salty, chewy pretzel bun, melted cheese, savory chicken, and sweet, tangy honey Dijon.
Add some grapes on the side and you have a simple lunch that feels complete without much work.
Make It Your Own
Add arugula for some freshness, swap in whatever cheese you already have, or use another bread or bun.
Think of this less as a strict recipe and more as an easy formula you can adjust based on what’s in your kitchen.

Fed in a Pinch
This is exactly the kind of meal I’m embracing lately: quick, practical, and satisfying.
Because good food doesn’t always need to be complicated.
Sometimes it’s just a few ingredients, 10 minutes, and something warm on your plate.
